Amazingly Easy Green Pancakes

When you find a great recipe, you just want to tell everyone! This is it! I heard about this recipe from others and had to make myself. Cooking and tasting is believing! These pancakes are full of greens and you would never know it. Plus, they are easier to make than a box of pancake mix. This will be a weekly breakfast form now on. Plus, they freeze great. If you have greens that are about to go bad, make a batch and freeze.

4 eggs

1 cup rolled oats

1 ripe banana

2-4 cups of greens (i added ½ zucchini also)

1 ½ tsp baking powder

1 ½ tsp vanilla.


  1. blend all ingredients in a blender.

  2. Heat skillet to 350 degrees

  3. Start cooking and flipping!


Serve with syrup, almond butter, bananas, yogurt, nuts and/or fresh berries.


Mix ins: nuts, dark chocolate chips, blueberries


Variations: instead of greens add 1 cup of pumpkin, 1 tsp pumpkin pie spice and ½ zucchini


Add: your favorite protein powder also.
