Kale pesto is my go-to for prepping meals that are both nutritious and delicious. It's all about being creative — whether you've got basil, pumpkin seeds, lemons, sundried tomatoes, nutritional yeast, garlic, or parmesan cheese, there’s always a pesto combo waiting to happen! 🌿✨

Recipe with or without basil:

3 garlic cloves

2 cups of kale

1 cup basil (if you got it)

1/3 cup, sundried tomatoes (not in oil)

1/2  juice of one lemon (a nice touch, but if you don;t have it, it will be fine)

½ cup walnuts (optional)

3 tbsp Parmesan, grated (optional) or nutritional yeast (for non-dairy)

½ tsp red pepper

½ tsp salt 

½ tsp pepper

1 tbsp of water 

½ cup walnuts (optional)

High quality olive oil 


OR


2 cup of Kale

1 cup of basil

½ teaspoon of salt

1/4 cup pepitas  (pumpkin seeds)

Juice of one lemon

1-2 cloves of garlic (optional)

1 Tablespoon nutritional yeast or 1/4 cup parmesan cheese

1/4 cup of olive oil
