The Banana Bruffin
No need to preheat the oven when heating the electric skillet takes only a few minutes! Use baking flour instead of all-purpose flour and save time preparing or just almond flour! This quick bread will be gone as fast as it took to make!
2 cups almond flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
4 eggs, whisked
2 ripe banana
1/3 cup pure maple syrup, brown sugar (adjust the amount if you would like
1 tsp vanilla extract
MIx ins- pecans, walnuts, almonds and chocolate chips
!. Preheat electric skillet to 200 degrees F and spray the pan with Avocado cooking spray.
2. Throw all ingredients in a blender (except mix-ins)
3. Pour in skillet and turn to 300 degrees F. Cover and bake for 30 minutes.
Oven- preheat 350, muffins 20 minutes, bread 40 minutes.
Banana or Pumpkin Muffin/Bread (with flour)
3 Large Bananas (or 3/4 cup puree pumpkin and 1 mashed banana)
1/4 to 1/2 cup sugar (brown, cane or coconut sugar)
2 egg
1 teaspoon vanilla
1 1/2 cup gluten free baking flour
(or if using gluten free all-purpose, add 1/2 teaspoon of salt, 1 teaspoon baking soda, 1 teaspoon baking powder)
1 teaspoon pumpkin pie spice (if using pumpkin)
1/3 cup coconut oil
1. Preheat electric skillet to 200 degrees F and spray the pan with Avocado cooking spray.
2. In a large bowl combine flour, baking agents, salt, and spices. Next add sugar and mix. Lastly add bananas, oil, eggs, and vanilla. Whisk until well combined.
3. Place in skillet and turn to 300 degrees F. Cover and bake for 30 minutes.
