Butternut Squash Lasagna

Butternut squash replaces the pasta and makes this meal a one dish wonder. Just look at those beautiful colors! Colors equal nutrition! Start counting colors and not calories and you will be amazed how much better you feel.

1 onion, chopped (or cone 2)

1 teaspoon minced garlic

3-4 cups of spiralized butternut squash (cone 2 or 3)

1 cup spinach

½ cup mushroom, sliced (cone 4)

1 pound Italian sausage (cooked)

1 cup spaghetti sauce (jar or homemade)

1 cup grated cheddar cheese (cone 1)

1 cup fresh mozzarella

Fresh chopped parsley


  1. Place onion, garlic and butternut squash in the electric skillet.

  2. Then layer mushroom, spinach, Italian sausage and sauce.

  3. Sprinkle with cheddar cheddar and mozzarella.

  4. Set temperature at 300. Cover and when valve clicks, set to 200 for 8 minutes.

  5. Or bake in the oven at 350 for 30 minutes.
