Butternut Squash or Spaghetti Squash Italian Feast
I love this because I don't have to boil water and make pasta. Butternut squash may have more carbs than zucchini noodles, but it's a great source of vitamin A, has only 82 calories in one cup, loaded with fiber and a great source of Vitamin C, E, magnesium, and potassium.
Serves 4-6
Ingredients:
onion- chopped or processed with cone 2
1 teaspoon of minced garlic
mushrooms, sliced or processed with cone 4
1 butternut squash, "shoe stringed" with cone 2
1 1/2 cups marinara sauce
fresh or shredded mozzarella (Cone 2)
Parmesan, grated (cone 1)
Fresh basil and arugula
Add onions, garlic, mushrooms and squash to electric skillet.
Add sauce and stir.
Set electric oil cored skillet to 300. Medium click low and for 15 minutes at 200.
Add fresh mozzarella and parmesan, fresh basil, arugula and microgreens
Spaghetti Squash
Cut in half lengthwise.
Place down in Electric Skillet with one cup of water.
Set electric oil cored skillet to 300. Medium click low and for 30 minutes at 200.
Scrap with fork and make "spaghetti".
Serve with pasta and sauce.
