Cashew Alfredo

The perfect meal on the night you say, "We have nothing here for dinner, what do we eat?". Cashews are a must to have on hand. Zucchini in the fridge and shrimp in the freezer, BOOM- DINNER! You're welcome.

Cashew Alfredo Sauce

(serves 4)


1 cup of raw cashews

3/4-1 cup plant milk or 2 percent dairy depending on consistency you like

1 teaspoon garlic and onion powder

4 Tablespoons of nutritional yeast

½ teaspoon of salt

2 tablespoon of fresh lemon juice


  1. Soak cashews for 4 hour or put in boiling water for five minutes.

  2. Blend ingredients until smooth.

  3. Cook pasta of choice, drain and add uncooked zucchini noodles (cone 2) and shredded mushroom (cone 2).

  4. Top with sauce, pecorino cheese (cone 1), chicken or shrimp,
