Fried Chicken, Vegetables and Cashew Cheese Sauce

Serves 4

4-5 chicken thighs

3 -4 cups of broccoli and cauliflower pieces


  1. preheat electric skillet to skillet to 450.

  2. Add chicken. Place lid ajar and set timer for 10 minutes.

  3. Flip chicken and add vegetables. Place lid on skillet and lower temperature to 200 for an additional 10 minutes.

  4. Drizzle cream over vegetables and serve.


Cashew Cheese Sauce


¾ cup cashews (soaked in water for 4 hours or soaked in boiling water for 5 minutes)

¼ cup nutritional yeast

¾ cup chicken broth, vegetable broth or almond milk (add more if you want it thinner)

¼ teaspoon paprika

¼ teaspoon turmeric

½ teaspoon garlic powder

½ teaspoon salt to taste


Blend until smooth. Server over potatoes, pasta, zucchini noodles, vegetables


Add in- ½ teaspoon on dijon and or minced jalapeños.
