Cauliflower Cilantro Lime Rice


1 medium head Cauliflower

2 garlic cloves

2 scallions, diced

kosher salt and pepper, to taste

The juice of one lime

1/4 cup fresh chopped cilantro


  1. Depending on how much rice you make, pick the pan that fits the amount you are making. Make sure it is about ⅔ rds full.

  2. RIce cauliflower on cone 2. Add to the pan with minced garlic.

  3. Add 2-3 tablespoons of stock or water.

  4. Cover and set to medium. When valve clicks turn to low for 2-5 minutes depending on how you like your cauliflower.

  5. Add lime, cilantro, salt to taste and drizzle a teaspoon of olive oil (optional- I like garlic infused olive oil).


Cauliflower Fried Rice


1 head of cauliflower (rice on cone 2)

1 onion, finely chopped (cone 2)

1 carrot, grated (cone 1)

1 teaspoon garlic, minced

1 cup of frozen peas

½ shredded purple cabbage (cone 4)

2 tablespoons of brown sugar

1 teaspoon fresh ginger juice (cone 1)

4 tablespoons of tamari or soy sauce (or coconut aminos omit brown sugar)

1 tsp rice wine vinegar

1 tsp red pepper flakes

3 eggs

1 teaspoon sesame oil

Chopped green onions


  1. Add vegetables to the pan or skillet (depending on the amount you will be making).

  2. Add 1-2 tablespoons of stock of water and medium click to low. Cook for about 2-3 minutes, after the click on low (depending on how soft you like your vegetables)

  3. In a small bowl mix sauce, brown sugar, ginger, vinegar, oil and red pepper flakes and whisk.

  4. Turn back to medium (300) , open and move vegetables to one side and add eggs to cook. MIx with “rice”.

  5. Garnish with green onions.
