Chimichurri Chicken and Vegetables
One skillet is all you need and dinner is ready in 30 minutes. The prep and clean up take only minutes. Herbs can count in your daily vegetable count of colors.
1 cup fresh cilantro leaves
½ cup fresh oregano leaves
½ cup fresh mint leaves
2 tablespoons red wine vinegar
¼ cup avocado oil
2 tablespoons water
½ teaspoon sea salt
1-2 garlic cloves
In a blender or food processor, add all of the ingredients and puree until smooth. Set aside.
Marinate, beef tenderloin medallions, chicken thighs, pork tenderloin medallions or chicken breast.
Preheat skillet to medium heat. Add protein and sear one side. Place lid ajar for 5-10 minutes (depending on size).
Add desired vegetables and turn to low (200 degrees) for 10 minutes.
