Chocolate Chip Cookies with Almond Flour

When you find a good base for a recipe, just change the flavor and it is a new recipe! This base is the same as the snickerdoodle one. I bet this would be amazing with walnuts also.

Ingredients:

1/4 cup butter OR coconut oil softened

1/2 cup coconut sugar

1 large egg

1 1/2 cup almond flour

2 tablespoons gluten-free starch (arrowroot or tapioca flour)

1 teaspoon vanilla

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips

2 tablespoon of milled flax (optional, but why not?) or walnuts


  1. Combine oil, sugar and egg.

  2. Then add dry ingredients and blend.

  3. Spray pan with avocado oil

  4. Preheat EOC to 200.

  5. Roll into 1 inch balls and place in skillet and flatten a bit.

  6. Turn to 300 and cook for 10-12 minutes.
