Skillet Cornbread

Chili and Cornbread- BOOM- DONE!!

Zucchini Cornbread

1 cup of baking flour

½ cup cornmeal

1/2 cup yogurt or sour cream

1 heaping teaspoon baking powder

½ teaspoon salt

1/8 cup honey

Pinch of cayenne pepper (optional)

2 eggs

¼ cup oil/butter/coconut oil

1 cup grated zucchini

  1. Mix dry, mix wet and then mix together with zucchini

  2. Preheat EOC to 200. Spray with avocado oil.

  3. Add batter to EOC.

  4. Turn EOC to 300, cover and set timer for 30 minutes.
