Creamy African Sweet Potato Lentil Soup

This is a slightly different soup than you might be used to, it provides a warm, rich flavor and is easy to have all the ingredients in the pantry when it's 6pm and you haven't thought about what to make.

Creamy African Sweet Potato Lentil Soup


1 onion cone (#2)

4 garlic cloves, minced cone (#1)

1 teaspoon grapeseed oil

1 teaspoon minced ginger cone (#1)

3-4 sweet potato cone (#3)

32 oz can diced tomatoes

1⁄2 cup organic natural peanut butter or 1 can of coconut milk (totally different flavors)

6 cups vegetable or chicken broth

2 teaspoon cumin

2 tsp ground coriander

1⁄4 tsp ground cayenne pepper

1 cup red lentils

1 tsp. Salt

5 cups finely chopped kale


  1. Process the onion and garlic and saute with oil for 2 minutes.

  2. Add ginger, sweet potato, tomatoes, broth, spices, salt and lentils peanut butter or coconut milk.

  3. Bring to a boil and let boil for five minutes. Then place the lid on and medium click low and let cook for 45-60 minutes

  4. Add in kale and cook for 5 additional minutes.
