Eggs, Smoked Salmon and Mixed Greens

Here is a family favorite. Everyone loves salmon but it's not like I alway have time to run out and buy fresh seafood. We can easily get our "fish requirement" in by having smoked salmon in the fridge. I usually make sweet potatoes and the cook the eggs in the skillet after. I only want one skillet to clean when everyone is rushing out the door. Paired with mixed greens or arugula, and it is almost too beautiful to eat!

  1. Process potatoes with Cone #3.

  2. Add grapeseed or avocado oil and seasoned salt, truffle salt or your favorite rub or seasoning.

  3. Depending on how many potatoes are added will determine how crispy the fries are. The less in the pan, the crispier the fry. I usually add about 1.5 inches of potatoes so they are less crispy but we eat lot, so I need more! Add fries and turn skillet to 350, around 10-15 minutes, flip and cover for additional 10 minutes with lid on (turn to 300). Remove lid if desired and "crisp" up the fries as desired.

  4. Scrambled: Whisk eggs (add a bit of water if desired) and add to preheated pan. Scrape with metal spatula and remove from the pan just before finishing the cooking process.
