Greek Quinoa Salad

Salad:

1 cup uncooked, cook according to directions

2 cups grape tomatoes, halved

3 persian cucumbers (cone 5)

1/2 cup pitted kalamata olives, sliced

1/3 cup red onion, chopped (cone 2)

1/2 cup crumbled feta cheese

salt and pepper, to taste

Fresh basil, sliced


Dressing:

1/3 cup olive oil (i like garlic infused)

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon honey

1 clove garlic, minced

1/4 teaspoon dijon mustard

1 teaspoon dried oregano

salt and black pepper, to taste


  1. Cook quinoa and let it cool.

  2. MIx ingredients for salad

  3. Combine ingredients for dressing.

  4. MIx and serve. Store for 1-2 days.
