Avocado Zucchini Noodles

1 cup fresh basil

1 avocado

1/2 cup olive oil

2 Tablespoon lemon juice

1/4 cup pumpkin seeds

1 Tablespoon nutritional yeast

1/4 teaspoon of salt

2 Tablespoon water

4 large zucchinis

1 cup cherry tomatoes


  1. Add basil, avocado, olive oil, lemon juice, 1/2 the pumpkin seeds, nutritional yeast, salt to blender or food processor. Add water to help blend. chunky is okay!

  2. Zoodle zucchini with cone 2

  3. Mix in dressing with zoodles and then add tomatoes and pumpkin seeds.
