(Serves 4-6)
1 small red onion
¼ cup fresh lime juice
2 large mangos (cone 4), chopped
1 small red pepper, chopped
¼ cup cilantro, chopped
1 garlic garlic clove
¼ cup fresh orange juice
1 jalapeno, chopped (optional)
½ can balck beans, rinsed and drained
Combine onions and lime juice and set aside for an hour.
Then stir together all ingredients and serve.
