Not Your Mama's Meatloaf

2 pounds of ground turkey or grass-fed ground beef

¾ cup panko bread crumbs

1 package of fajita seasoning or homemade (see recipe below)

4 ounces of diced chilis

2 eggs beaten


Glaze:

3/4 cup of organic ketchup

¼ cup apricot jam

2 teaspoons chipotle adobo sauce


Fajita seasoning:

1 teaspoon salt

2 teaspoon chili powder

1 teaspoon paprika

½ teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon cayenne

½ teaspoon cumin


  1. MIx meat, bread crumbs, seasoning, chilis and eggs.

  2. Preheat Electric Oil Cored Skillet to 300F.

  3. Shape meat into loaf shape.

  4. Cover, when vapo- valve clicks lower temp to 250 for 25 minutes.

  5. Open and add ½ glaze and cover for 5 minutes.

  6. If desired, allow to cool and slice into 1 inch thick sliced and grill both sides.

  7. Serve with extra glaze.

  8. If in oven, bake at 250 for 15 minutes, then add glaze and pour ½ on top and cook for another 30 minutes. Slice and Grill slices if desired.
