Pickled Onions
Got a minute? Okay maybe two, but it is sooooo worth it! There are some health benefits to pickled onions, but to me the real benefit is they are a tasty replacement for a few less healthy condiment options. Plus, when we add them to salads, quinoa, veggie burgers, greek, tacos, potato salad and even on avocado toast, they make eating more plants easy. Basically, it takes any meal to new heights.. . just because you took two minutes to make them. Have I convinced you yet? Like, save and tag me when you make them! I'd love to see your creation.
1 -2 red onions depending on size
1/2 cup red wine vinegar, white, apple cider or rice vinegar ( i like white or ACV)
(whatever you have on hand)
3/4 cup water
1 1/2 Tablespoon maple syrup , sugar or stevia leaves
¾ teaspoon salt
16 ounce jar or covered glass dish
Slice onions.
Add to a jar with vinegar and salt.
Wait 30 minutes.
Best for the first 4 days but good for 1-2 weeks.
Add ins: peppercorns, garlic, maple syrup, honey, jalapeno, dill, cilantro, parsley and/or red pepper flakes.
