Quinoa Salad with Apples and Walnuts
Make ahead for lunch or have this salad ready for dinner when you walk in the door after a long day at the office.
3 cups fresh spinach leaves
2 cups cooked quinoa (see tip sheet for cooking quinoa)
1 1/2 cups chopped apples, fuji or gala
1/3 cup dried cranberries
1/3 cup crumbled goat cheese or feta
1/2 cup chopped walnuts
salt and black pepper,
Maple Lemon Dressing
⅓ cup olive oil
1 Tablespoon fresh lemon juice
2 Tablespoon apple cider vinegar
1 tablespoon of maple syrup
1 garlic clove minced
Salt and pepper to taste
2 teaspoon dijon mustard
Cook Quinoa.
Cut apples with with cone 3
Make dressing by combining ingredients in a glass jar.
Combine salad ingredients and toss to coat with dressing.
Eat as a side or make it a main dish.
