Dairy Free Mac and Cheese

Mac and Cheese brings back childhood memories, but the thought of having a box of mac and cheese today is a nightmare! Here is a healthy alternative made with chickpea pasta, nutritional yeast, cashews and zucchini! So creamy and no guilty thoughts here!

1 1/2 cups raw cashews (soaked in water for 2 hours or in boiling water for 5 minutes)

2 tablespoons fresh lemon juice

3/4 cup water

1/2 cup nutritional yeast

1/2 teaspoon chili powder

1 teaspoon of garlic powder or (3 garlic cloves minced)

1/2 teaspoon turmeric

pinch of cayenne pepper (optional)

1/4 tsp chili powder

freshly ground black pepper

1/4 tsp paprika

8 ounces high protein pasta (gluten-free, if needed)

1 zucchini (spiralized or cone 2)

  1. Combine all ingredients in a blender and blend until smooth.

  2. Cook pasta and drain.

  3. Add raw zucchini and mix with sauce.

YUM!

Also- top with Brazil Nut Cheese is optional.
