The Best Halloween Pumpkin Chili
I always make chili on Halloween so I can enjoy the night and have very little clean up. This chili is a great option as it has an entire can of pumpkin in the chili! It’s an added bonus of vitamin A and the last healthy food item your kids will have for at least 24 hours!!
1 medium onion, chopped
1 teaspoon garlic, minced
2 cans of black beans
1 can of organic pumpkin
1 can of garbanzo beans or pinto beans
1 can (14 ounce) fire roasted tomatoes
3 cups chicken broth
1 pound ground beef, turkey or chicken
Frank’s hot sauce (if desired)
2 teaspoon parsley flakes
2-3 teaspoons chili powder
1 ½ teaspoon cumin
1 ½ teaspoon oregano
½ teaspoon salt
Top with:
Chopped red peppers, sliced avocado, thinly sliced green onions, cilantro
Cheddar cheese or Brazil Nut Cheese (dairy alternative)
In the rice cooker or 5 quart pot preheat to medium and saute onions, then add ground beef, chicken or turkey. Cook.
Add the rest of the ingredients and cover. Set to medium heat and when valve clicks turn to low for at least 20 minutes or longer.
